The Delta Extractys selective extractor offers winemakers versatile control over extraction levels tailored to grape variety and desired wine style. This results in wines with enhanced structure, richer colour, and intensified aromas, this produces more structured, colourful and aromatic wines with a more distinctive character (supple, fruity wine profile, etc.).
Compatible with all existing thermovinification systems regardless of heating temperature, it installs effortlessly above the maceration tank without modifications. Suitable for both liquid and solid-phase vinification, including hot skin maceration. Maintenance is straightforward, featuring hot-water cleaning of pressure tubes via the harvest piping system.
