How the Flavy ML handles weather extremes & vintage irregularities:

Late-season rainfall can dilute your grapes right at harvest. This lowers sugar concentration, weakens natural structures, and leaves your must waterlogged. The Flavy ML safely extracts pure water (permeate) under pressure to reverse rain dilution. It concentrates grape must to restore structural balance and boosts wine intensity without altering the natural varietal profile.

Unusually hot growing seasons lead to rapidly rising sugar levels. High sugar levels result in excessively high potential alcohol, which can lead to sluggish or stuck fermentations. Lower your must's sugar content prior to fermentation to ensure a smoother, more predictable yeast lifecycle. If dealing with finished wine, use the partial dealcoholisation process to adjust the final alcohol level down by several degrees.

Contamination from Brettanomyces can spoil a batch by introducing volatile ethyl phenols. When combined with the optional Flavy EP Kit, the unit isolates and reduces ethyl phenols down below the sensory perception threshold. This removes faulty barnyard odours while preserving the wine's intrinsic structure, colour, and fruitiness.

Standard reverse osmosis units on the market struggle with turbidity. They typically require pristine input liquids between 5 to 20 NTU, leading to rapid clogging and regular operational disruptions. Equipped with highly resilient membranes, the Flavy ML handles input products with turbidity levels up to 400 NTU. This delivers unmatched throughput compared to alternative systems that fail above 20 NTU.
